About the Project
Supported by a USDA Higher Education Challenge Grant, this initiative, led by Drs. Junehee Kwon and Kevin Sauer, uses storytelling-based learning to engage students in food allergy prevention and management.
Although food allergies affect millions of Americans, formal education on this topic remains limited in foodservice and nutrition programs. This project helps fill that gap by preparing future foodservice leaders to create safer dining experiences for everyone.
