Through two innovative, USDA-funded initiatives, Dr. Michelle Childs and Dr. Heejin Lim are helping rural businesses and producers thrive in today’s ever-changing environment:

Food Allergy Education
Through a USDA-funded project, Dr. Junehee Kwon and project partners developed storytelling-based educational materials to help faculty engage students in learning about food allergy awareness and management.

Food4VOLS
Food4VOLS, led by Tyler White and supported by the UT Student Environmental Initiatives Fund, rescues surplus food and transforms it into free, ready to heat meals for the UTK community.
