Through rigorous coursework and hands-on experiences, you’ll build the expertise needed for careers in dietetics, public health nutrition, research, and beyond — making a real difference in how people live and thrive.
Program overview
The science of nutrition seeks to understand the connections between diet and health, and to use this knowledge to improve the well-being of individuals, communities, and populations. Our undergraduate program spans the breadth of nutrition science from biochemical pathways to community applications to clinical practice through three concentration options: Biomedical Nutrition Science, Community Nutrition, and Dietetics. Each of our concentrations equips students with excellent skills in communication, critical thinking, and teamwork, all of which are highly valued by today’s employers.
All three of our concentrations offer accelerated combined bachelor’s/master’s degree options that allow qualified students to earn both a BS and an MS degree in just five years. These programs save tuition dollars and give students a competitive edge when entering the job market.

Introductory Nutrition
Nutritional concepts, current consumer issues in nutrition, nutritional needs through the life cycle, and international nutrition concerns and/or issues.
World Foods
This course provides information on foods found around the world, including historical and cultural aspects, how to select and prepare them, and their nutritional content and disease-prevention capacity.
Nutrition Assessment
Introduction to the Nutrition Care Process, including validated malnutrition risk screening tools, with a focus on mastering knowledge of all domains of the nutrition assessment. Introductory pharmacology and dietary supplements will be addressed.
Minerals in Human Nutrition
Nutritional and biochemical significance of minerals as it pertains to human health and disease.
